Eat our Persian Blue Salt with a batch of salted chocolate truffles. Gently heat salted butter and double cream together until warm. Stir in chopped chocolate until it melts. Chill until firm, then scoop into balls and roll in cocoa powder and Persian blue salt. 

Why not try breaking with tradition. In Iran, they use blue salt in desserts, because of its slightly sweet aftertaste. But it's also an easy way to add a salty sweet note to savoury dishes, from poached fish to white meats. Or to add a splash of colour to a salad.

 

ORIGIN

Our Persian blue salt comes from just one salt mine in northern Iran. They only harvest a small amount every year, making it one of the rarest salts in the world.

Unlike other coloured salts, the colour comes not from a mineral, but a trick of the eye – the salt's crystalline structure fractures light in an unusual way.
